Easter Pancake Creme Egg Tower

To celebrate Easter I made a creme egg pancake tower. I have never made a pancake tower before, so it was alot of fun! The tower is made up of pancake “cakes”, two american pancakes with melted creme eggs and maltiser rabbits on the inside! Oozing goo seeping out the inside. Enjoy.

Ingrediants

For the pancakes:

  • 135g plain flour
  • 1 tsp baking powder
  • 130ml milk
  • 1 large egg, lightly beaten
  • 2 tbsp melted butter

For the toppings:

  • 12 creme eggs
  • 1 bag of malteser rabbits
  • 1 lindor mini egg
  • 1 cadbury’s caramel mini egg
  • 150g milk chocolate
  • 100g white chocolate

Method

Begin by melting 8 creme eggs and half a bag of malteser rabbits. Put them in a heat resistant bowl and place it on a pan with simmering water on a medium heat. Stir occassionally until it turns into a liquid.

While the chocolate melts, cover an oven tray with tin foil. When melted, pour the chocolate into small circles- an inch smaller than the intended size of the american pancakes. Leave the chocolate “disks” to set.

To make the pancake “cakes”, heat a large greese proof pan on low-medium heat with a little oil or a dash of butter, cover all of the surface. Using a ladal, pour two portions of the pancake batter on to the pan and leave to cook for around 30 seconds before placing on one of the chocolate “disks”. As soon as you place the disk on one of the pancakes, flip the other pancake on top of the pancake top side down so the pancakes merge together to seal the chocolate “disks” together. Leave to cook for another 2-3 mins before flipping to cook the other side.

At the same time as cooking the pancakes, place 100g of milk chocolate into one microwavable bowl and 100g of white chocolate into another. Place them in the microwave seperatly for 15-30 seconds each time until the chocolate has melted. Stur after after time and watch carefully to avoid the chocolate burning. Alternatively, melt the milk and white chocolate in a bowl over a pan of hot water the same you melted the creme eggs and malteser rabbits earlier.

When all 8 pancake “cakes” have been made, pile them into a tower on a large flat surface such as a surving tray or a cheese board. Pour both bowls of chocolate over the pancake tower and ‘crack’ the creme eggs, lindor mini egg, cadburys caramel egg and remaing malteser rabbits on top.
